Easter Sunday is just two days away. I love this time of year when we have the opportunity to focus on and celebrate the resurrection of our Lord!
Part of that celebration includes eating, of course, so I thought I’d share a favorite brunch recipe of mine. I first made this dish when my husband pastored a small church in Bombay Beach, CA while he was a student in Bible college. One of the church members helped me coordinate a spring event, and this was her recipe. I have continued to use it for Easter Brunch and special occasions over the years. It is also great for company. Enjoy!
Ingredients:
8 eggs
½ cup flour
1 teaspoon baking powder
½ pound grated cheddar cheese
½ pound grated jack cheese
2 cups cottage cheese
½ cup diced chilies
Directions: Mix all the ingredients together and pour into a 9 x 13 pan. Bake at 350 degrees for about 35-40 minutes (until the eggs are set).
